Preparation Instructions

You will need: 3 Eggs, 1/2 cup Milk, 1¼ sticks (10 Tbsp.) Unsalted Butter.

Preheat oven to 400°F. Pour dried blueberries into a small bowl and cover with water. Let stand for about 10 minutes stirring occasionally to hydrate. Place butter in a microwave safe bowl. Heat in microwave for 20 to 30 seconds or until melted and set aside. Line a muffin/cupcake pan with paper cups or spray with cooking spray. In a large bowl, combine eggs, melted butter, milk and add muffin mix. Stir just until ingredients are blended. Do not overmix. Drain blueberries and gently stir into batter. Fill each cup 2/3 full and bake for 20 to 22 minutes, or until tops are golden brown. Cool on wire rack. Yields 12 muffins.
